Learn the basic garnishing rules that add visual depth to a plate, sauce application techniques and how to choose the right garnish.
What Will You Learn in This Lesson?
- Apply the odd-number rule and asymmetric placement on a plate.
- Use negative space deliberately to avoid overcrowding a plate.
- Correctly apply one of the sauce techniques (trail, dots, pool).
- Choose an edible, functional garnish that genuinely relates to the dish.
- Apply garnish with correct timing, right before serving.
Required Equipment
Required
- Fine-tipped tongs or tweezers
- A small offset spatula
- A squeeze bottle with a fine tip
- A small brush (for sauce painting)
Optional
- A stencil or cutter
- A piping bag
Alternative
- No tweezers: place small garnishes with a clean fork instead
Safety
- Always remove any skewer or pin used for garnishing before serving — no inedible item should be left on the plate.
- Make sure any flower or leaf you use as garnish is edible; flowers sold for decoration are not meant to be eaten.
- Never place raw vegetable or herb garnishes on the plate without washing them.
