Plating and Service · Orta
Final Touches Before Serving
Learn the checks and touches that happen in the last few minutes before a plate reaches the table — seasoning, resting, sequence.
What Will You Learn in This Lesson?
- Perform a final seasoning check before the plate leaves the kitchen.
- Rest meat for the right duration before cutting it.
- Apply the correct plating sequence (base-main-sauce-garnish).
- Verify the plate's internal temperature before serving.
- Carry the plate from kitchen to table without disturbing it.
Required Equipment
Required
- A tasting spoon
- Aluminium foil (for resting meat)
- Clean serving plates
- A spatula or ladle (for plating)
Optional
- A kitchen thermometer (for checking internal temperature)
- A sauce spoon or squeeze bottle (for drizzling)
Alternative
- No thermometer: check the temperature by touching the back of your finger to the centre of the plate
Safety
- Don't dip a spoon you've already tasted with back into the pot without washing it; saliva contaminates the whole dish.
- Don't grab a plate fresh out of the oven by its bare edge; ceramic and metal plates stay far hotter than they look.
- Keep your hand back when unwrapping the foil over resting meat; the steam trapped underneath rises suddenly.
