- A separate tasting spoon
- A few small tasting bowls
- A teaspoon for small additions
- A pen and notebook

- A dropper or pipette
- A small scale for precise measuring
Alternative
- No separate tasting spoon: rinse the spoon in hot water after every taste
Safety
- Never dip a spoon you have tasted from back into the pot.
- Do not sip hot sauce straight off the spoon; pour a little into a small bowl and let it cool first.
- Do not taste too many times in a row — your palate gets tired and your sense of taste dulls.
