Alternative
- No mortar: put the spice in a zip-lock bag and crush it with a rolling pin
Safety
- Don't add ground spice too close to a boiling pot; the rising steam can lift the powder into the air and make you cough.
- Don't step away from the pan while toasting spices; they can burn and turn bitter within seconds.
- After handling chilli peppers, don't touch your eyes or face before washing your hands.
