A popular Thai egg dish, kai look koei is made by deep-frying leftover boiled eggs and coating them in a sweet-tart tamarind sauce. Crispy fried shallots and fresh coriander are scattered on top for serving.

How to make it?

Fry the eggs

Deep-fry the boiled eggs in batches in hot oil until the surface wrinkles and turns deep golden.

Fry the shallots

15 min

Fry the thinly sliced shallots in the same oil, in batches, until crisp, then drain on paper towels.

Make the sauce

15 min

Simmer the tamarind paste, honey, fish sauce and dried red chili in a pan until thickened.

Serve

10 min

Halve the fried eggs, coat with the sauce and serve topped with the fried shallots and coriander.

Reminder

Lower the eggs into the hot oil gently with a long spoon to avoid splattering. Allergens: contains egg and fish (fish sauce).

Demirhindi bulamadığım için yerine limon suyu ve biraz daha fazla bal kullandım, ekşiliği farklı ama yine de dengeliydi. Kalabalık bir davet için miktarları iki katına çıkardım, yumurtaları üç partide kızarttım.
