Sumac boiled eggs are a practical Jordanian dish made by quickly hard-boiling eggs in a pressure cooker and seasoning them with olive oil and sumac, a staple of picnic baskets. The pressure cooker shortens the boiling time while also making the shells easier to peel.

How to make it?

Arrange the eggs

Arrange the eggs in the pressure cooker and cover with water.

Cook under pressure

Close the pressure cooker lid and once it whistles, lower the heat and cook for 6 minutes.

Let the pressure drop

Wait for the pressure to drop on its own before opening the lid.

Peel

Plunge the eggs into cold water and peel off the shells.

Season and serve

Mix the olive oil and salt and drizzle over the eggs, then sprinkle with sumac and serve.

Reminder

Do not peel the eggs without plunging them into cold water first, or the shells will not come off easily. Wait for the pressure to drop on its own — opening it early can overcook the whites. Allergens: contains egg.
