Believed in Pakistani kitchens to aid digestion through the winter months, ginger murabba is made by first mellowing fresh ginger slices' sharp bite and then simmering them in a thick, cardamom-scented syrup. It can be eaten by the spoonful at breakfast or stirred into hot water for a warming winter drink.

How to make it?

Boil the ginger

15 min

Boil the thinly sliced ginger in plenty of water for 15 minutes; this first boil softens its sharp bite.

Change the water and boil again

20 min

Drain and cover the ginger with fresh water again, boil for another 20 minutes and strain; the slices noticeably soften in this second boil.

Make the syrup

10 min

Dissolve the sugar in 2 cups of water in a wide pot, bring to a boil, then add the boiled ginger.

Cook until thickened

35 min

Add the cardamom pods and cook over low heat, stirring often, for 35 minutes until the syrup coats the back of a spoon, then stir in the lemon juice just before taking it off the heat.

Rest and jar

20 min

Take the murabba off the heat and let it rest at room temperature for 20 minutes, then spoon it into clean jars once it has cooled a little.

Reminder

Do not add the ginger to the syrup before boiling it in two separate batches of water, or the murabba will stay too sharp. Let it cool completely at room temperature before jarring, otherwise condensation inside the jar can cause mould.

Cutting the ginger into matchstick-thin strips instead of very fine slices gives the murabba a more noticeable bite when eaten. A few cloves in place of the cardamom lend the same warm spice note.

Tarifte yazılan 20 dakika bekleme yeterli gelmedi bende, kavanoza koyduğumda murabba hâlâ ılıktı ve birkaç gün sonra kapağın altında yoğuşma oluşup hafif küf kokusu geldi. Zencefili soyarken elimi birkaç yerden kestiğim için bir dahaki sefere mutlaka eldiven kullanacağım ama asıl kusur benim soğutmayı yeterince beklememem oldu.

Haklısınız, 20 dakikalık bekleme oda sıcaklığı içindi; sıcak mutfaklarda bu süreyi 40 dakikaya kadar uzatabilirsiniz, kavanozu kapatmadan önce dokunduğunuzda serin hissetmesi yeterli bir işarettir.

İkinci haşlamayı tarifte yazan 20 dakika yerine biraz uzun tutup neredeyse yarım saat kaynattım, zencefil dilimleri gene de çiğnenince belirgin bir keskinlik bırakıyordu. Şurubun kıvama gelmesi de ocağımda oldukça uzun sürdü, murabba beklediğimden daha sulu kaldı.
