Prepare the fruit
10 minWash the persimmons and slice them thinly.
Persimmon pickle is a pickle made by thinly slicing firm, unripe persimmon and letting it sit in a pomegranate molasses and olive oil brine, adding a distinctive flavour to the breakfast table. The fruit's firm texture takes on a pleasant crunch once pickled.
Wash the persimmons and slice them thinly.
Crush the garlic and tuck it between the slices.
Mix the vinegar, water, salt and pomegranate molasses to make the brine.
Pour the brine over the slices in the jar.
Drizzle with olive oil and seal the jar.
Make sure the persimmon is firm and unripe — a ripe fruit will fall apart in the brine. Do not eat it before letting the jar sit in a cool spot for a few days, or the flavours will not settle.
If you cannot find pomegranate molasses, lemon juice with a pinch of sugar creates a similar sweet-sour balance; the colour will be lighter but the flavour character holds.
