Salmon, rice and boiled egg are layered in a yeasted dough and baked to make koulibiac, one of the most demanding celebration dishes of Russian cuisine. Getting the layers to slice cleanly without collapsing into each other takes real skill.
Knead the flour, yeast, warm milk, one egg, melted butter and salt into a dough, cover and let it rise for 30 minutes.
Boil the rice and drain it, then slice the two boiled eggs.
Sauté the onion in a pan until soft, add the salmon slices and cook lightly for 8 minutes, then season with dill and black pepper.
Roll the risen dough into a rectangle, layer the rice first, then the salmon, then the sliced egg on top, and roll it up, sealing the edges tightly.
Place the roll on a baking tray and bake in an oven preheated to 190°C for 40 minutes, until golden on top.
Spread each layer to an even thickness when assembling; uneven layers cause the slices to fall apart. Allergens: contains wheat (gluten), dairy, egg and fish.
