Soften the eggplants
8 minSteam the baby eggplants in the pressure cooker with a little water for 8 minutes until the skins turn just slightly pliable, then drain and let them cool.
From Iraq's pickling tradition, this recipe briefly softens baby eggplants in a pressure cooker before stuffing them with garlic and red pepper, then leaves them to cure in a vinegar brine. With no added sugar, it won't affect blood sugar.
Steam the baby eggplants in the pressure cooker with a little water for 8 minutes until the skins turn just slightly pliable, then drain and let them cool.
Slit each eggplant lengthwise down the middle, then pack the thinly sliced garlic and red chilli into the opening.
Pack the stuffed eggplants tightly into clean jars.
Bring the apple cider vinegar, water and salt to a boil, then pour the hot brine with the bay leaves into the jars until the eggplants are fully covered.
Do not over-soften the eggplants in the pressure cooker, or they'll tear while you stuff them; take them out once the skin is just slightly pliable. Before sealing the jar, make sure the brine covers all the eggplants.
Pressing the eggplants under a weight for a few minutes after taking them out of the pressure cooker helps drain excess water, which keeps the brine from getting diluted.
