Beat the butter and icing sugar together until soft and fluffy.
Add the egg and mix well.
Sift in the flour and cocoa to quickly form a dough.
Gently fold the dark chocolate and pomegranate seeds into the dough; do not overwork it, or the seeds will release their juice.
Break off small pieces of dough onto a tray and bake in an oven preheated to 175°C for 15 minutes, until the edges are lightly firm.
Do not overmix the dough when adding the pomegranate seeds, or they will release juice and make it soggy. Leave enough space between the cookies on the tray, as they spread slightly while baking. Allergens: contains wheat (gluten), milk and dairy, egg.
If you use milk chocolate instead of dark chocolate, the cookies turn out sweeter; in that case, reducing the icing sugar by a pinch keeps the balance.
