Add the fish sauce at the very end — boiling it too long sharpens the salt and can turn it bitter. If you skip skimming the foam while boiling the beans, the stew can taste slightly bitter. Allergens: contains fish (fish sauce).
If you cannot find fish sauce, balance the salt with a little soy sauce instead; the umami depth will be slightly lighter but the dish still works.
