Ireland's classic colcannon filling of mashed potato and cabbage, wrapped in thin dough and boiled, makes these mini dumplings that bring two cuisines together. The nut-free filling, lightened with olive oil, can also be frozen raw.

Sauté the cabbage in olive oil until soft and mix with the mashed potato, spring onion and black pepper.
Roll the dough thin and cut into small squares, spoon filling into the centre of each and press the edges firmly shut.
Boil the dumplings in salted water for 8 minutes, until they float, then drain.
Press the edges firmly when sealing the dumplings, or an open one will fall apart in the boiling water. To freeze them, freeze individually on a tray before boiling and then bag them up. Allergens: contains wheat (gluten) and egg.
