A favourite in Austria's Alpine region, this thin-crust flammkuchen is made by spreading an unleavened dough with cream and topping it with thinly sliced pumpkin and onion before baking at high heat. With its paper-thin, crisp crust setting it apart from classic Italian flatbreads, it's a favourite on autumn tables.

Wrap the dough and let it rest for 10 minutes.
Slice the pumpkin and onion as thinly as possible.
Roll the dough paper-thin and spread with cream, arrange the pumpkin and onion slices and sprinkle with nutmeg and pepper. Bake in an oven preheated to 220°C for 15 minutes, until the edges darken.
Roll the dough as thin as possible; thicker patches won't reach the desired crispness in the oven. Allergens: contains wheat (gluten) and milk.
Using a mandoline to slice the pumpkin gives paper-thin, even slices, which also helps the topping cook evenly.
