Roasted bulgur and tomato sauce is a quick Saudi-style dip made by briefly cooking pre-boiled fine bulgur with tomato paste, cumin and red pepper flakes, then brightening it with lemon juice. The bulgur itself gives the sauce both texture and a whole-grain depth.

How to make it?

Cook the paste

Heat the olive oil in a pan, add the tomato paste and cook it briefly.

Add the bulgur

Add the boiled bulgur, cumin and red pepper flakes and stir, then cook over low heat for 5 minutes.

Finish and serve

Remove from the heat, stir in the salt and lemon juice, and serve warm.

Reminder

Do not add the bulgur before the tomato paste has cooked through in the oil, or the raw paste taste will spread through the whole sauce and turn it bitter. Allergens: contains wheat (gluten).

If you use coarser köfte-style bulgur instead of the fine kind, the texture will be chunkier; in that case you will need a little more boiling water.
