Coconut soaked in milk and combined with cardamom becomes a soft cake in this recipe, bringing Indian cuisine's love of spice to tea time. The long soak keeps the coconut moist and gives the cake a light, fibrous texture.

How to make it?

Soak the coconut in milk

Stir the coconut into the warm milk and set it aside for 15 minutes, until the milk is fully absorbed.

Mix the wet ingredients

Whisk the eggs with the sugar until foamy, then stir in the oil and the soaked coconut.

Fold in the dry ingredients

Sift the flour, baking powder and cardamom into the wet mixture, stir until smooth and pour into the tin.

Bake it

45 min

Place the tin on the middle shelf of an oven preheated to 170°C and bake for 45 minutes, until a skewer comes out clean.

Reminder

Do not skip soaking the coconut in milk, or the dry coconut will dry the cake out. Allergens: contains wheat (gluten), dairy and egg.

Kakule yerine tarçın kullansam kekin dengesi bozulur mu, yoksa ikisini yarı yarıya karıştırmak daha mı iyi olur? Ayrıca hindistan cevizini biraz daha uzun süre sütte bekletmek dokuyu daha da yumuşatır mı diye merak ediyorum.
