Inspired by Syrian cuisine's love of rosewater, this jam is made by macerating overripe figs at risk of spoiling in sugar, then simmering them down over low heat. Rosewater added off the heat gives the jam an elegant aroma reminiscent of Damascus markets.

Toss the cut figs with the sugar and let them sit for 20 minutes; this lets the figs release their own juice.
Simmer the fig and sugar mixture with the water and lemon juice over low heat until thickened.
Off the heat, stir in the rosewater, then pour into jars and let cool.
Add the rosewater after taking the jam off the heat, not while it's still boiling, or the aroma will cook off.
If your figs are very ripe and soft, you can reduce the sugar by a spoonful; overripe figs are already sweeter on their own.
