Strawberry and blueberry freezer jam is a fresh, sweet English preserve made by mixing the fruit with pectin without any cooking at all, then letting it set. Since no heat is applied, the fruit keeps its vivid colour and fresh flavour to a large degree.

How to make it?

Prepare the fruit

Mash the strawberries and mix them with the blueberries in a bowl.

Prepare the pectin mix

5 min

Mix the sugar and pectin together in a separate bowl.

Combine

10 min

Stir the sugar-pectin mixture into the fruit along with the lemon juice, mixing continuously for 3 minutes; the stirring time matters for the pectin to activate.

Let it set

30 min

Rest the mixture at room temperature for 30 minutes; the pectin sets during this time.

Jar and chill

60 min

Fill into jars and refrigerate for at least 60 more minutes before moving to the freezer.

Reminder

Stir the pectin mixture into the fruit for at least 3 minutes without stopping, or the pectin won't activate properly and the jam won't set. For long-term storage, keep the jars in the freezer.

You can leave out the blueberries entirely and use only strawberries; keeping the same amount of pectin is enough in that case.

Karışımı 3 dakika yerine 5 dakika karıştırdım çünkü pektinin dağıldığından emin olamadım, buzdolabında 30 dakika sonra kıvamı hâlâ biraz akışkandı. Belki dondurucuya almadan önce biraz daha beklemek gerekiyor.
