Azuki mochi is a chilled Japanese dessert made by quickly softening red beans in a pressure cooker, mashing them with sugar into anko paste, and wrapping it in a dough made from glutinous rice flour. The pressure cooker dramatically shortens the hours-long bean-cooking time of the traditional method.

How to make it?

Prepare the beans

Rinse the azuki beans and put them in the pressure cooker, covering with water.

Cook under pressure

10 min

Close the pressure cooker lid and once it whistles, lower the heat and cook for 10 minutes.

Make the anko

5 min

Wait for the pressure to drop, open the lid, and mash the beans with the sugar into a smooth paste.

Prepare the mochi dough

Mix the mochiko, water and a pinch of sugar and cook in a pot for 6 minutes until you get a sticky dough.

Shape it

Divide the dough into small pieces on a starch-dusted surface, spoon in the anko, and shape into round balls.

Chill and serve

Chill the mochi balls in the fridge for 5 minutes before serving.

Reminder

Do not expect the bean paste to be perfectly smooth when mashing — a slightly grainy texture is traditional. Dust your hands generously with starch while shaping the dough, or it will stick.

If you cannot find mochiko, simmering regular rice flour with a little water into a thick paste gives a similar texture, though the result will be slightly less stretchy.

Fasulyeyi düdüklüde 10 dakika yerine yalnızca 8 dakika pişirdim çünkü eski model tencerem hızlı ısınıyor, yine de yeterince yumuşamıştı ve ezmek son derece kolay olmuştu.

Anko biraz fazla tatlı geldi bana, şeker miktarını kısmak isterdim ama genel doku ve kıvam gerçekten çok başarılıydı. Düdüklü tencere fasulyeyi gerçekten inanılmaz derecede yumuşatmış.

Hamuru şekillendirirken bana çok yapışkan geldi, ellerimde sürekli dağılıyordu; nişasta miktarı yetersiz kaldı sanırım. Sonuç yine de yenilebilirdi ama görüntüsü pek düzgün olmadı, biraz dağınık kaldı.
