Prepare the figs

Figs that have gone too ripe and sat in the fridge are simmered with sugar to make this preserve, part of Argentine cuisine's waste-cutting jar tradition. Free of nuts and simple in its makeup, it is served on crackers or toast as a mid-meal treat.
Quarter the ripe figs and toss them with the sugar and lemon juice.
Cover the mixture and set it aside for 15 minutes so the figs start releasing their juice.
Transfer the mixture to a pan with the cinnamon stick and bring to the boil; once boiling, lower the heat and simmer for 30 minutes, stirring occasionally, until thickened.
Remove the cinnamon stick and spoon the jam into clean jars while hot.
The riper the figs, the sweeter the result, so you can cut back on the sugar accordingly. Stay by the pan while it boils, as the fig syrup can foam up and boil over.
