A sharp spice blend from Georgian kitchens, ajika is made by finely grinding red chilli peppers together with garlic, cilantro and walnuts. Containing no flour or grain of any kind, this intense meze is a low-carbohydrate companion to grilled meats and cheeses.

How to make it?

Prepare the peppers

Remove the seeds from the red chilli peppers and roughly chop them.

Grind

10 min

Grind the chopped peppers together with the garlic cloves, cilantro, walnuts, cumin and salt until you have a smooth paste.

Rest

10 min

Stir the vinegar into the paste and let it rest in the fridge for at least 10 minutes.

Reminder

Wear gloves while handling the chillies; touching your eyes with bare hands afterward can cause a stinging sensation for hours. Allergens: contains tree nuts (walnut).

If you want to tone down the heat, you can swap some of the chillies for sweet red pepper; the colour and texture stay the same.
