Made by jarring green tomatoes and hot peppers in a vinegar brine and processing them in a water bath, this pickle contains no sugar, making it a low-carbohydrate option. The jars pack easily into a picnic basket and bring a sharp kick to the table.
Wash the green tomatoes and hot peppers, quarter the tomatoes and trim the stems off the peppers.
Boil the vinegar, water, salt, pepper flakes, peppercorns and bay leaves together in a pot to make the brine.
Pack the tomatoes, peppers and peeled garlic cloves tightly into clean jars, then pour the boiling brine over them.
Place the sealed jars in a wide pot of boiling water, with enough water to cover them. Process by boiling for 30 minutes, then remove from the pot and let them cool.
Store the jars in a cool, dark place for at least 1 week; the flavor settles in during this time.
While processing the jars in the water bath, make sure the water is boiling and the lids are fully submerged, or the shelf life will be shorter.
If you halve the amount of hot pepper, the pickle will have a milder kick; to make it sharper, you can add another teaspoon of pepper flakes.
