A pressure cooker seals its lid tightly and lets trapped steam build up pressure inside, which pushes water's boiling point above 100°C. At that higher temperature, food cooks far faster than in a regular pot — chickpeas that take 1.5 to 2 hours on the stovetop can finish in 20 to 25 minutes under pressure.
How does pressure raise the temperature?
In an open pot, water boils at 100°C at sea level and can never get hotter than that; add more heat and it just evaporates faster, not hotter. In a pressure cooker, the sealed lid traps the steam that forms, pressure builds, and that pressure pushes water's boiling point up to around 115-120°C.
That higher temperature breaks down cell walls and connective tissue in food much faster, which is why tough dried beans or a cut like stew meat can cook in a third, even a quarter, of their normal time under pressure.
Does the time saved vary by food?
The time drop isn't the same across the board — vegetables that already cook fast only save a few minutes, while bone-in meat or dried legumes that normally take hours can shave off a much larger chunk of time. That's why a pressure cooker pays off most for stewed dishes and anything that would otherwise simmer for a long stretch.
Why does the pressure need to drop before opening?
Once cooking is done, the pressure needs to release either naturally or quickly under running water; the lid is designed so it physically can't open until the internal pressure is fully gone. Letting pressure drop naturally also gives meat fibers extra time to relax and rest, which usually makes for a better result in meat dishes.
Is it right for every dish?
Pressure cookers are ideal for stews, soups, and anything cooked in plenty of liquid, but they're not suited to frying or browning, where the surface needs dry heat to crisp up — with the lid sealed, steam forms instead and browning never happens. That's why recipes that call for browning usually start with the lid off, searing the ingredients first, then close the lid to finish cooking under pressure.
Does altitude affect cooking time?
At high altitude, water boils at a lower temperature in both a regular pot and a pressure cooker, so anyone cooking at elevation may want to add a few extra minutes to a pressure-cooker recipe. Still, since the pressure effect is far bigger than the altitude effect, most of the time savings a pressure cooker offers at sea level carries over at altitude too.
Do modern electric pressure cookers work differently?
Electric pressure cookers rely on the same pressure principle, but since they regulate heat and pressure automatically, they need far less manual attention than a stovetop model. Timing-wise there's little real difference between the two; the main distinction is that an electric model can release pressure on its own and automatically switches to a keep-warm mode once the program finishes.
Check the lid's rubber gasket regularly on either type; a worn gasket delays the cooker reaching full pressure and stretches the cooking time beyond what a recipe expects.
