What Temperature Does Chocolate Melt At (Bain-Marie/Microwave)?

Dark chocolate melts completely around 45-50°C; in a bain-marie this temperature is reached with gentle indirect heat, while in the microwave it's reached with short bursts at low power. Milk and white chocolate have a different cocoa butter ratio, so they melt slightly lower, around 40-45°C.

Temperature here doesn't just determine whether the chocolate melts — it also determines whether it stays glossy and snaps cleanly once it sets, which is why a thermometer makes a real difference for coating and confectionery work.

What temperature does chocolate melt at in a bain-marie?

In the bain-marie method, chocolate is heated by the steam from barely simmering water underneath, not by direct flame; the bowl must not touch the water. Dark chocolate reaches a smooth, flowing consistency at 45-50°C this way, while milk and white chocolate reach it around 40-45°C.

The water should never be allowed to boil; boiling water can splash a stray drop into the bowl and cause the chocolate to seize. The water underneath should barely steam, not bubble.

Milk and white chocolate contain more milk solids and sugar than dark chocolate, which makes them even more sensitive to the smallest trace of moisture; that's why any condensation building up on the lid or rim of the bowl needs extra care so it doesn't drip in.

How do you melt chocolate in the microwave?

Microwave melting means dropping the power to around 50% and heating the chocolate in 20-30 second bursts, stirring after each one so the outside doesn't melt and burn while the inside stays solid. The total time depends on the amount, but a small bowl usually takes around 1-2 minutes.

Chocolate often looks like it's still holding its shape even when it's essentially melted, so stirring before judging whether it needs another burst is worth doing every time.

Using a microwave-safe glass or plastic bowl helps the heat spread more evenly through the chocolate; metal bowls should never go in the microwave, since they carry a real risk of sparking.

What temperatures does tempering need?

For a glossy, snappy coating, dark chocolate is first melted to 45-50°C, then cooled to 27-28°C, and finally gently rewarmed to a working temperature of 31-32°C. Milk chocolate runs about 2°C lower at each of these three steps, and white chocolate about 3-4°C lower.

Chocolate that skips these three steps still melts and sets, but the surface often turns dull with pale, streaky patches caused by the cocoa butter separating out.

Why does chocolate seize when it touches water?

If even a small amount of water gets into melted chocolate, the sugar particles inside absorb it and clump together, turning the smooth liquid into a grainy, stiff mass. This reaction is called seizing, and it can be triggered by just a few drops.

Seized chocolate usually can't be brought back to its original state, but stirring in small amounts of hot water or cream can turn it into a pourable sauce that still works in another recipe.

The amount of liquid added matters here; you generally need at least a fifth of the chocolate's weight in hot liquid, since adding less can make the clumping worse instead of fixing it.
