Basic Cooking Methods
Boiling, sautéing, grilling, baking — which one is preferred when? Once you grasp the logic of these four basic methods, you'll start to understand for yourself why recipes say "do it this way."
What Will You Learn in This Lesson?
- Be able to tell boiling, sautéing, grilling, and baking apart
- Be able to decide which cooking method suits a given ingredient
- Be able to explain why the pan should hold only a small amount when sautéing
- Know why patting food dry before grilling matters
- Be able to apply watching color and texture instead of the clock when baking
Required Equipment
Required
- A pot
- A pan
- Oven mitts
- A slotted spoon or strainer
Optional
- A steamer basket for steaming
- A kitchen thermometer
Alternative
- No steamer basket: place an inverted colander in the pot and cover with a lid to steam instead
Safety
- When lifting a steaming lid, keep your face away from the pot and tilt the lid away from you; the trapped steam can cause a serious burn in an instant.
- Always put on an oven mitt before touching a hot pot or pan handle, even if it doesn't look hot.
- Turn the heat down a little before adding damp or wet food to an oily pan; a wet surface hitting hot oil causes it to spatter suddenly.
