2 minWhisk the olive oil, sugar, orange juice and orange zest together in a bowl until smooth.
Rooted in the olive oil culture of the Greek islands, these cookies use olive oil and whole wheat flour instead of butter. Orange juice and zest brighten the dough, which needs no chilling and can be shaped and baked in a matter of minutes.
Whisk the olive oil, sugar, orange juice and orange zest together in a bowl until smooth.
Add the whole wheat flour, cinnamon, baking powder and salt to the wet mixture and stir until a soft dough forms. Lightly flour your hands, pull off pieces about 3 cm across, and shape into balls.
Bake in an oven preheated to 190°C until the bottoms turn lightly golden.
This dough is softer and oilier than most cookie doughs; dust your hands lightly with flour before shaping, or it will stick to your fingers. Allergens: contains wheat (gluten).
