An elegant addition to breakfast and brunch tables, onion jam is made by first softening sliced onions in a pressure cooker, then reducing them with sugar and vinegar to a thick jam. Serve alongside a breakfast spread or on toasted slices.

How to make it?

Slice the onions

Peel the onions and slice them thinly into half-moons.

Soften in the pressure cooker

Place the onions in the pressure cooker with the olive oil and salt, close the lid and cook for 5 minutes once it reaches pressure, then release the pressure immediately.

Reduce with sugar

20 min

Leave the lid off, stir in the sugar and balsamic vinegar, and cook over low heat, stirring constantly, for 20 minutes until thick and glossy.

Jar the jam

10 min

Let the jam cool slightly, then transfer it to a clean jar.

Reminder

If you stop stirring after opening the lid, the jam scorches at the bottom, so keep stirring throughout. Even if it looks runny on the stove, the jam thickens noticeably as it cools.

Şeker yerine bal kullanmayı denedim ama kıvam hiç tutmadı, 20 dakika sonunda hâlâ sulu bir hal aldı ve kavanoza aktarınca akışkan kaldı. Belki sirke miktarını da azaltmam gerekiyordu.
