Desalted salt cod is mixed with boiled potato, egg and parsley, then fried to make these fritters, one of the most familiar snack traditions of Portuguese cuisine. Crisp outside and soft inside, they can be served warm or cold.

Step by Step

How to make it?

1

Boil and flake the fish

15 min

Boil the desalted cod for 15 minutes and drain, then remove any bones and flake it finely.

2

Make the mixture

15 min

Combine the flaked fish with the mashed potato, egg, onion, garlic, parsley, black pepper and flour into a smooth mixture.

3

Shape the fritters

5 min

Use two spoons to shape the mixture into small oval fritters.

4

Fry them

10 min

Fry the fritters in hot oil for 10 minutes, until golden on all sides, then drain on paper towels.

Reminder

Do not skip desalting the fish, or the fritters will turn out too salty. Allergens: contains fish, egg and wheat (gluten).
