One of Jamaica's tropical preserves, papaya jam is made by carefully reducing the fruit, which is naturally low in pectin, together with fresh ginger. Getting the set right takes skill; jarred too early, the mixture stays runny.

Toss the papaya cubes with the sugar and lemon juice, and let sit for 15 minutes to release their juices.
Transfer to a pot, add the grated ginger, and simmer over low heat, stirring constantly, for 30 minutes until it coats the back of a spoon.
Ladle the hot jam into clean jars, seal the lids, and let cool to room temperature.
Test the consistency by dropping a little onto a cold plate; if it still runs, the jam is not ready yet — since papaya is naturally low in pectin, cutting the cook short is an easy mistake to make.
