Colombia's foundational sauce, hogao, is made by slowly sautéing fresh tomato and scallion over low heat and thickening it with whole corn flour. Using a small amount of olive oil and a whole-grain thickener turns the sauce into a low-calorie accompaniment.

How to make it?

Prepare the vegetables

Grate the tomato and finely chop the scallion and garlic cloves.

Sauté

Sauté the scallion and garlic with the cumin in the olive oil for 10 minutes.

Slow-simmer

60 min

Add the grated tomato with the black pepper and salt, and simmer over low heat, stirring often, for 60 minutes.

Thicken with corn flour

10 min

Dissolve the whole corn flour in a few tablespoons of the sauce and stir it back in, simmering for another 10 minutes.

Reminder

Stir the sauce often while it simmers over low heat; if it catches at the bottom it leaves a bitter taste.
