Red pepper, onion and garlic, roasted in the air fryer and blended with tamarind, make sambal, the fiery sauce that is a staple of Malaysian tables. This roasting concentrates the ingredients' flavours and deepens the sauce.

Roast the vegetables

Toss the red pepper, chilli, onion and garlic cloves in olive oil and arrange them in the air fryer basket, roast at 200°C for 12 minutes, until the edges char. If you do not have an air fryer, roast them in an oven at the same temperature for 12 minutes instead.

Blend it

Blend the roasted vegetables with the tamarind paste until smooth.

Finish in the pan

Transfer the sauce to a pan, stir in the sugar and salt, and simmer over low heat for 8 minutes.

Reminder

Removing the chilli seeds keeps the sauce at a more manageable heat level. If you do not have an air fryer, roast the vegetables in an oven at the same temperature for 12 minutes instead.

Sebzeleri airfryer sepetine fazla sıkışık dizdiğim için bazıları eşit kavrulmadı, bir kısmı çiğ kaldı. Sosun tadı yine de fena değildi ama rengi beklediğimden daha açık oldu.
