Crispy onion vermicelli rice is a Lebanese-style pilaf made by toasting vermicelli and cooking it with rice, then topping it with spicy onions crisped in the air fryer. The air fryer's intense hot air crisps the onions almost as much as deep-frying, using far less oil.
Soak the rice in warm salted water for 10 minutes, then rinse.
Toss the onions with the oil and cook in an air fryer preheated to 190°C, shaking the basket occasionally, for 8 minutes until crisp. If you don't have an air fryer, a preheated oven at 190°C gets the same crispness in 12 minutes.
Toast the vermicelli in a pan until golden.
Add the drained rice, red pepper flakes and allspice and stir for 2 more minutes.
Add hot water and salt, bring to a boil, then cover and simmer over low heat for 12 minutes.
Remove from the heat and let it steam for 8 minutes, then top with the crispy onions and serve.
Spread the onions in a single layer in the air fryer basket — piling them up stops them from crisping. Keep an eye on the vermicelli while toasting it, as it can darken and burn quickly. Allergens: contains wheat (gluten).
If you cut back on the pul biber and add sumac instead, the pilaf takes on a more tangy character; the two spices are often used together on Lebanese tables.
