Thyme chicken sauté is a quick one-pan main made by browning cubed chicken thigh in olive oil and cooking it with green and red peppers, finished with thyme. No fat is used beyond the olive oil and the chicken's own juices, which keeps the dish both ketogenic and heart-friendly.
Cube the chicken thigh, and roughly chop the onion and peppers.
Heat the olive oil in a pan, add the chicken and brown it on all sides.
Add the onion and peppers and cook over low heat for 15 minutes, until the chicken releases its juices and they cook back down.
Season with thyme, salt and black pepper and serve.
Do not overcrowd the pan when you first add the chicken, or it will release liquid and boil instead of browning. Adding the peppers later keeps their texture crisp.
If you use chicken breast instead of thigh, shorten the cooking time by 3-4 minutes, or the meat will dry out.
