Tomato, red pepper and onion cook quickly in the pressure cooker and get blended smooth to make sofrito, the base sauce behind so many dishes of Spanish cuisine. Free of dairy, it can be used confidently at crowded tables.
Chop the tomato, red pepper, onion and garlic.
Sauté the onion and garlic cloves in olive oil in the pressure cooker, add the tomato, red pepper, sweet paprika, bay leaf and salt, close the lid and, once it starts hissing, lower the heat and cook for 20 minutes.
After turning off the heat, leave the cooker sealed for 10 minutes so the steam releases naturally.
Remove the bay leaf, blend the sauce smooth, and spoon it into clean jars while hot.
To keep the sofrito nice and thick, you can simmer it uncovered for a few extra minutes after taking it out of the pressure cooker if needed. Any extra can be portioned into jars and frozen.
