Inspired by Azerbaijan's kutab tradition, this sandwich is made by wrapping a spinach and white cheese filling in lavash and pan-frying it in butter. Sliced and served on a large platter, it's a quickly prepared snack for crowded tables.

Spread the filling in a thin layer over the lavash sheets and roll them up tightly.
Fry the rolled lavash in butter, turning occasionally, until browned on all sides, then slice and serve.
Don't spread the filling onto the lavash before draining the excess water from the spinach, or the lavash will soften and tear while frying. Allergens: contains wheat (gluten) and milk.
For a bigger crowd, you can double the recipe and prepare several lavash wraps, then slice them all onto one large serving platter.
