Low-fat yoghurt mixed with honey and rosewater is frozen to make this dessert, turning Iraqi cuisine's fondness for rosewater into a light ice cream. Lower in fat than a cream-based version, it is ideal for crowded tables after a heart-healthy option.

Prepare the mixture

Whisk the yoghurt with the honey, rosewater and milk until smooth.

Chill it

15 min

Chill the mixture in the fridge for 15 minutes.

Freeze it

90 min

Pour the mixture into a wide, shallow container and freeze, stirring with a fork every 20 minutes for the first hour, for a total of 90 minutes.

Serve

5 min

Scoop the ice cream into bowls, scatter the pistachio on top and serve.

Reminder

Add the rosewater a little at a time, tasting as you go, since too much can leave a soapy flavour. Stirring at regular intervals while freezing keeps ice crystals from growing large. Allergens: contains dairy (yoghurt) and tree nuts (pistachio).

Gül suyunu tarif edildiği kadar azar azar eklememe rağmen bende hafif sabunumsu bir tat bıraktı, bu belki de kullandığım markanın yoğunluğundan kaynaklandı. Miktar için net bir ölçü verilmesi daha güvenilir olurdu.
