Mustard savoury cookies are spicy-salty tea biscuits made by working mustard, kaşar cheese and pul biber into a buttery dough. The sharp bite of the mustard is balanced by the richness of the cheese, giving the cookies a distinctive flavour.
Knead together the butter, mustard and kaşar cheese.
Add the flour, pul biber and salt to quickly form a dough.
Wrap the dough and chill it in the fridge for 60 minutes; this firms it up for cutting.
Roll out the dough and cut it into shapes.
Brush with beaten egg and bake in an oven preheated to 180°C for 18 minutes, until golden.
Do not cut the dough before chilling it, or the cookies will lose their shape while baking. You can freeze the shaped raw dough and bake it whenever you like. Allergens: contains wheat (gluten), milk and dairy, egg.
If you cut back on the mustard and add a pinch of cumin instead, you get a milder flavour; the texture of the cookies stays the same.
