Pit the sour cherries.
Put the pitted cherries and water in the pressure cooker and close the lid; once it starts hissing, lower the heat and cook for 5 minutes.
Turn off the heat and let the cooker rest unopened for 10 minutes.
Stir the honey and lemon juice into the strained liquid and serve over ice.
Don't leave the cherries in the pressure cooker too long; the short cooking time lets them release their juice without falling apart.
Adding the honey together with the lemon juice makes the sweet-tart balance more pronounced; you can halve the honey if you prefer it less sweet.
