The first thing to check when choosing a pot or pan is whether its base is close to the diameter of the hob ring it will sit on. A base noticeably smaller than the ring wastes most of the heat and lengthens cooking time; one noticeably larger leaves cold spots around the edges that never get properly hot.
The second thing to check is whether the base material suits the type of hob you have — not every pot performs the same way on every hob.
Why does size matter more on induction?
Induction hobs heat only the area of the base in contact with the magnetic field; if the base is smaller than the ring, the part outside that zone never heats up, and on some models the hob won't even detect the pan and switches off. That's why on induction the base diameter should match at least 80 percent of the ring's diameter.
On gas and electric coil hobs this match matters less, since heat radiates directly from the flame or the element; a small base loses efficiency here but doesn't stop the pan from working.
Which diameter suits which ring?
Small hob rings are usually 14 to 18 centimetres across, suited to small saucepans or sauce pans; large rings range from 20 to 26 centimetres and suit big stockpots or wok-style pans.
A cookware set doesn't need every piece the same size; since most kitchens have rings of mixed sizes, a set of 3-4 pieces in different diameters tends to be more useful.
How should size be chosen for oven use?
For pots and pans that also go in the oven, the oven's interior width matters as much as hob compatibility; including handles, the full length shouldn't exceed a standard oven's interior width, usually around 45 to 50 centimetres. If used without a lid, the height also needs to clear the oven's shelf spacing.
For heavy cookware like cast iron that goes straight into the oven, the handle needs to be metal and heat-resistant too — pans with plastic handles aren't suited for oven use.
What goes wrong with the wrong size?
A pot smaller than the ring lets heat escape around the edges, wasting energy and overheating the handles. A pan larger than the ring develops an overheated centre, which can burn the oil or food in the middle while the edges stay undercooked.
This imbalance shows up most clearly when frying — the oil can be smoking in the centre of the pan while food near the edge is still barely warm.
