Filled jars of acidic preserves like jam or marmalade are fully submerged in a pot of boiling water and boiled for 10-15 minutes; this is known as the water bath method, and the time can run longer depending on jar size.
For low-acid vegetable preserves, such as green beans or peas, this method is not enough; those need a temperature boiling water cannot reach, or they carry a serious food-poisoning risk called botulism.
For which preserves is a water bath enough?
The water bath method is only safe for foods that are naturally acidic or have vinegar added: jam, marmalade, fruit compote, and vinegar pickles are the main examples. In these, the acidic environment stops the botulism spores that survive even at 100°C from multiplying, so a short boil is enough. For very sweet fruits that are not acidic enough on their own for jam, adding a bit of lemon juice pulls the acid balance back into this method's safe range.
Why do low-acid preserves need a different process?
In low-acid vegetables like beans, corn or carrots, botulism spores survive the 100°C of boiling water; killing them requires a pressure canner reaching 116-121°C. At that temperature the process usually runs for 20-90 minutes, depending on the vegetable and the jar size. A regular home pressure cooker cannot reliably reach and hold the exact pressure and time needed, so it is not considered a safe substitute for this step.
Is sterilising the jar the same as cooking the contents?
No — boiling empty jars for 10 minutes beforehand and drying them only clears the container of germs. Making the food inside actually safe requires separately boiling or pressure-processing the filled jar for the time described above; sterilising an empty jar does not replace that step.
How do you check whether the lid has sealed properly?
Once the boiling is done, the jars are left to cool at room temperature; as they cool, the metal disc in the centre of the lid caving inward with a faint pop shows that a vacuum has formed and the lid has sealed properly. If pressing the lid still makes it flex up and down, no vacuum formed, and that jar should go in the fridge and be used up soon.
Draping a cloth over the jars while they cool softens any sudden temperature change from passing drafts, lowering the risk of the glass cracking.
How does jar size change the timing?
The times given above are generally for medium-sized (roughly half-litre) jars. Larger jars take longer for the heat to reach the centre, so a few extra minutes should be added to the recommended time; smaller jars can run a bit shorter but should not go below the recommended minimum. At high altitude, where water boils at a lower temperature, it is a good idea to extend the boiling time slightly.
If the preserve contains meat or a dairy product, a low-acid ingredient, the process still requires a pressure canner regardless of jar size; a water bath is never enough for these, whatever size jar is used.
Arranging the jars so they do not touch each other before lowering them into the boiling water, leaving a few centimetres of gap between them, lets the water circulate evenly around every jar.
