How Many Minutes Does Squid Take to Cook?

Squid is one of the trickiest seafoods to time: it should be cooked either very briefly, in 1-2 minutes over high heat, or slowly, over 30-45 minutes on low heat. Anything in between, roughly 5-15 minutes, squeezes its proteins tight and turns it rubbery and tough.

People with a shellfish allergy should be cautious trying squid for the first time, since similar reactions can occur with other seafood.

How do you pan-cook squid rings?

Thin squid rings cook in a very hot pan with olive oil for about 30-45 seconds per side, 1-2 minutes total. The rings should start curling slightly and turning white the moment they hit the pan; they should come off the heat as soon as that happens, since every extra 10-15 seconds noticeably toughens the texture. The pan needs to be smoking hot for this method to work; squid dropped into a merely warm pan will not cook in the same time and starts toughening instead.

How does slow cooking in a stew or sauce work?

In dishes like a tomato-based stew or squid casserole, squid is simmered gently for 30-45 minutes; that long stretch lets the fibres, which tighten up at first, gradually soften again. Pulling it off the heat too early, at 15-20 minutes, catches it right at its toughest point, before it has reached the stage where it softens back up.

Squid cut into larger chunks needs a bit longer to soften than squid cut into rings, so if a pot has pieces of different sizes, the larger ones should get a separate fork check to make sure they have actually softened.

How long does deep-fried squid take?

Squid rings dredged in flour and deep-fried at 180°C reach a golden colour in about 2-3 minutes; that is quick because the thin flour coating conducts the high heat fast. The rings should be stirred often once in the oil and lifted out with a slotted spoon the moment they turn golden. If the oil is too cool the squid soaks up grease and turns heavy, and if it is too hot the outside can burn while the inside stays glassy, which is why checking the oil temperature with a thermometer gives a more consistent result.

How can you tell squid is properly cooked?

With quick cooking, squid should turn from a dull to an opaque white and the rings should curl slightly; if it still looks glassy and translucent, it needs more time. With slow cooking, the sign to look for is that it falls apart easily with a fork; if it is still firm and resistant, it needs to keep simmering.

Does frozen squid cook differently from fresh?

Frozen squid, once thawed and dried thoroughly, cooks in the same time as fresh squid; but leftover surface moisture will release water in the pan and delay browning. Thawing it overnight in the fridge rather than at room temperature gives a better result both for safety and texture.

Some frozen squid is sold already lightly pre-blanched, and for that kind the time can drop to roughly half of the standard timing, so it is worth checking the package for guidance. Not refreezing squid once it has thawed avoids both a loss of texture and a possible food safety issue.
