The most common reason chocolate seizes in a water bath is that a drop of water or steam gets into the bowl and combines with the cocoa solids and sugar, turning the chocolate into a gritty, solid mass. This is known in the kitchen as seizing, and it happens because the balance between the chocolate's fat and any water gets thrown off.
Why does contact with water cause such a problem?
Chocolate normally contains almost no water; it has a high fat content, which is what lets it melt into a smooth, flowing texture. A small amount of water that gets into the bowl wets the sugar particles in the cocoa and makes them stick together, which pulls the chocolate away from its liquid fat phase into a thick, grainy mass. Oddly, a small amount of water causes the big problem, while deliberately adding a large amount of liquid, as in making a sauce, prevents this separation; the issue is not water itself, but a small, uncontrolled amount getting in.
What should you watch for to prevent seizing?
The bowl used in a water bath should not touch the boiling water underneath, and should only be heated by the steam; if the bowl touches the water, both overheating and steam splashing become more likely. The spoon and bowl should be completely dry, with no moisture left before the chocolate pieces are added. If the bowl has no lid, care should be taken while stirring so that steam rising from the pot below does not condense and drip into the bowl; the bowl should be chosen larger than the pot underneath.
Can seized chocolate be saved?
Adding a small amount of hot water or boiling cream to seized chocolate and stirring quickly can sometimes bring it back to a flowing state; the logic here is not to reduce the water but to add enough liquid to fix the separation. This rescue does not always work, and the saved chocolate may no longer be pure enough to pour into a mould and set; in that case, redirecting it into a recipe that uses liquid chocolate, like a sauce or ganache, is the most practical solution.
Is microwaving a safer option?
Microwaving removes the risk of steam contact entirely compared with a water bath, which makes it an alternative that lowers the risk of seizing; even so, moisture still needs to be kept out entirely, and the container the chocolate sits in should be dry. Stopping and stirring at short intervals, roughly every 15 to 20 seconds, is the most reliable way to stop chocolate from burning or clumping in the microwave too.
