Offal (sakatat) is the general term for the animal's internal organs and other parts besides muscle meat, such as liver, kidney, heart, tripe, and brain. Each requires a different texture and cooking method. In Turkish cuisine it is used in soups, grilling, and pan-frying.
Where It's Used
“Sort the offal by type and cook each separately using the appropriate method.”
