Shank (incik) is a cut from the lower part of the animal's front or hind leg, rich in bone and connective tissue. With long, moist cooking it gelatinizes and becomes tender. It is loved as oven-braised shank and in boiled dishes.
Where It's Used
“Slow-cook the shank with vegetables in a pot for a long time.”
