Pot Cooking Techniques
Learn the difference between sautéing and sweating, boiling versus simmering, how to deglaze a pot, and the right order for a stew.
What Will You Learn in This Lesson?
- Apply the difference between sautéing and sweating
- Use boiling versus simmering in the right situation
- Deglaze the pot to lift a sauce base from the fond
- Follow the right order (searing, sweating, cooking) in a stew
- Choose the right pot size for the amount of food
Required Equipment
Required
- A heavy-bottomed pot
- A tight-fitting lid
- A wooden or silicone spoon
- A heat-resistant oven mitt or pot holder
- A pair of tongs
Optional
- A kitchen thermometer
- A slotted spoon
Alternative
- No oven mitt: use a folded dry cloth, never a wet one
- No slotted spoon: leave the lid slightly ajar and drain through the gap
Safety
- Open the lid tilted away from you to avoid a steam burn.
- Never grip a hot handle with a bare hand; a damp cloth conducts heat straight through and can burn you.
- If boiling liquid starts to overflow, lower the heat first and let it settle before lifting the pot off the stove.
