Alternative
- No sieve: pass the sauce through a fine-holed slotted spoon instead
Safety
- Don't taste a sauce straight out of a rolling boil; spoon a little out first and let it cool for a few seconds.
- Don't dip a spoon you've already tasted with back into the pot without washing it; bacteria spread through the whole dish.
