Practical Rescue Techniques
Before you throw out an over-salted, split, burnt or watery dish, learn the practical rescue techniques worth trying first.
What Will You Learn in This Lesson?
- Tell the difference between mistakes that can be rescued and ones that can't
- Bring an over-salted dish back into balance by increasing its volume
- Re-emulsify a split sauce with an egg yolk
- Thicken a watery dish with a cornstarch slurry
- Soften dried-out meat by warming it through in sauce or stock
Required Equipment
Required
- A ladle
- A spare pot (for transferring away a burnt smell)
- A whisk (for bringing a broken sauce back together)
- Cornstarch
Optional
- An immersion blender (for thickening a thin dish)
- A sieve
Alternative
- No immersion blender: purée part of the dish in a regular blender and stir it back in
Safety
- When transferring a dish with a burnt smell to another pot, pour carefully without scraping the bottom; splashing hot liquid can burn your hand.
- Fully submerge an immersion blender's blade in the hot liquid before turning it on; a half-submerged blender splatters.
- Never touch a spinning blender or mixer blade with your finger or a spoon; unplug it first.
