Required Equipment
Required
- A kitchen thermometer (for meat and liquids)
- A timer
- Familiarity with reading the stove and oven's temperature settings
Optional
- An infrared surface thermometer
- A second, backup timer
Alternative
- No thermometer: check the colour of the cut surface and the clarity of the juices instead
Safety
- When inserting the thermometer's probe into the food, keep your other hand clear of the tip's path.
- Once you've set the timer, don't wander far from the stove for long; don't go so far you won't hear the alarm when it goes off.
- Don't touch the hot surface or liquid you're checking with your bare hand; the thermometer itself may also be hot.
