Required Equipment

- A chef's knife
- A non-slip cutting board
- A firm vegetable such as onion or carrot for chopping practice
Optional
- A honing steel
- A second, smaller knife for fine work
Alternative
- No non-slip board: place a damp cloth or paper towel underneath it
Safety
- Always keep your guiding hand in a claw grip while chopping; fingertips curled in, knuckles resting against the side of the blade.
- If the cutting board slips on the counter, stop right away and slide a cloth underneath it; a sliding board throws off your rhythm and raises the risk of a cut.
- Don't leave the knife in the sink between chopping bursts; a hidden blade is a serious cut risk for whoever reaches in next.
