Zeynel Ergin Gevrek Fırını carries forward a bakery tradition in İzmir's Alsancak district that traces back to the 1880s. For nearly eighty years the shop was run by a Greek family before master baker Zeynel Ergin took it over in 1962, and his standing in the city's breakfast culture grew so strong that the street where the bakery sits was renamed 'Zeynel Ergin Sokağı' in 2022. The stone-oven bakery keeps three staples of İzmir mornings alive: sesame-crusted gevrek rings, the flaky unleavened pastry known as boyoz, and kumru, a sandwich filled with cheese and sausage. For many İzmir residents, picking up a warm gevrek before catching the morning ferry is close to a daily ritual, and the bakery draws both locals and visiting tourists for the same reason. Everything on offer is built around baked goods, and nothing in the sourced material ties the shop to alcohol or pork.
